Quinoa Salad with Veggies

Ingredients:

  • 1 cup cooked quinoa
  • 1/2 cucumber (chopped)
  • 1/2 red bell pepper (chopped)
  • 1/4 cup cherry tomatoes (halved)
  • 1/4 cup feta cheese (optional)
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions:

  1. In a bowl, mix the cooked quinoa, cucumber, bell pepper, and cherry tomatoes.
  2. Drizzle with olive oil and lemon juice.
  3. Toss in the feta cheese (if using) and season with salt and pepper. Mix well and serve cold or at room temperature
