Quinoa Salad with Veggies
Ingredients:
- 1 cup cooked quinoa
- 1/2 cucumber (chopped)
- 1/2 red bell pepper (chopped)
- 1/4 cup cherry tomatoes (halved)
- 1/4 cup feta cheese (optional)
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions:
- In a bowl, mix the cooked quinoa, cucumber, bell pepper, and cherry tomatoes.
- Drizzle with olive oil and lemon juice.
- Toss in the feta cheese (if using) and season with salt and pepper. Mix well and serve cold or at room temperature
