Eggplant Parmesan

Ingredients:
- 2 large eggplants, sliced into rounds
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 cups marinara sauce
- 1 cup mozzarella cheese, shredded
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh basil for garnish
Instructions:
- Preheat the oven to 375°F (190°C). Place eggplant slices on a baking sheet and brush with olive oil.
- Sprinkle breadcrumbs and Parmesan cheese over the slices, and bake for 25 minutes until golden.
- Spread a layer of marinara sauce in a baking dish, add the baked eggplant slices, top with more sauce and mozzarella.
- Bake for an additional 15 minutes until the cheese is melted and bubbly.
- Garnish with fresh basil and serve
