Pasta Primavera

  • 12 oz (340g) pasta (penne, fusilli, or your choice)
  • 1 cup cherry tomatoes, halved
  • 1 zucchini, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 3 garlic cloves, minced
  • 1/4 cup olive oil
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish
  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute.
  3. Add the zucchini, bell pepper, and broccoli, and cook for 5-7 minutes until the vegetables are tender.
  4. Stir in the cherry tomatoes and cook for another 2 minutes.
  5. Toss the cooked pasta with the sautéed vegetables and Parmesan cheese. Season with salt and pepper.
  6. Garnish with fresh basil and serve.
