Pasta Primavera
Ingredients:
- 12 oz (340g) pasta (penne, fusilli, or your choice)
- 1 cup cherry tomatoes, halved
- 1 zucchini, sliced
- 1 yellow bell pepper, sliced
- 1 cup broccoli florets
- 3 garlic cloves, minced
- 1/4 cup olive oil
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil for garnish
Instructions:
- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute.
- Add the zucchini, bell pepper, and broccoli, and cook for 5-7 minutes until the vegetables are tender.
- Stir in the cherry tomatoes and cook for another 2 minutes.
- Toss the cooked pasta with the sautéed vegetables and Parmesan cheese. Season with salt and pepper.
- Garnish with fresh basil and serve.
